Mee Hong Kong for iftar today. We have this on every Ramadan, first Ramadan without failed. Recipe by my beloved mom, Samyah. What I like about this recipe, there is no need to add corn flour to thicken the gravy.
6 cloves garlic
1 medium onion
2 inhces ginger
1 packet yellow noodles or 1 packet bee hoon
200grams chicken meat (prefer the breast)
1 tspn chicken stock
2 tspn white pepper
Salt to taste
Fried oinions for garnshing
Blend garlic, ginger and onion. Saute the blended ingredients for about 2 minutes. Pour in about 2 cups of water and add the chicken meat, squids and prawn and simmer until cooked. Add in the chicken stock, pepper and salt. Cook for about 5 minutes and off the flame.
To serve, blanched the yellow noodles. Place the noodles in a bowl and add the gravy. Sprinkle some fried onions.
To serve bee hoon, make sure to soak it with hot water first until it turned soft to texture.
If you prefer to thicken the gravy, add in about 2 tbspns of corn flour mixed with water.
